- Salumiere Stephen Pocock makes over 40 different types of salumi for San Franciscos high priests of cured meats Boccalone. Few people are so well-acquianted with the pig and all its parts. In this class, youll taste a dozen different salumi from Boccalone and other local producers dedicated to handcrafted, small batch meats. Youll learn about the history and art of salumi-making as well as the different cuts and spices that distinguish one delicious cured meat from another.
